Kabanosy (ka-BAN-osee) are in a class by themselves. Made from best quality lean pork meat seasoned with pepper, garlic, a faint trace of caraway and allspice, then smoked and dried. Like other dried sausages, kabanosy require no refrigeration. The best way to store them is to hang them up in a cool, well-ventilated cellar. Perfect appetizer or as a snack between meals also commonly used as hiking food. They have a reputation of mysterious disappearances from the household pantries and their delicious taste is to blame.
